Super Salad 

 

Baby Kale, Avocado & Radish Salad topped up with seeds make it very nutritious option for your lunch. Prepare in advance in a glass jar and take to to work. Your tummy will thank you!

Ingredients:

 

  • 1 Avocado

  • A handful of Baby Kale

  • A handful of Peppery Rocket Salads (optional)

  • 1 cup of Radish cut into wedges

  • 1 cup shredded Raw Turnip 

  • 1 tbs of Roasted Sunflower Seeds

  • 1 tbs of Roasted Pumpkin Seeds

 

Method:

 

1. Prepare your ingredients for the salad. Wash and dry Kale and Rocket leaves. Cut radish in to wedges. Shred raw turnip and slice avocado.

 

2. Roast pumpkin and sunflower seeds in a non -sticky pan (no oil needed) until it starts popping. 

 

3. Carefully mix greens and veggies in a bowl and top it up with roasted seeds. 

 

4. Dress it up with a tiny splash of Balsamic vinegar and olive oil.

 

Super quick and simple way to get your greens in.
