  Veggie Toastie






Serves 2. Perfect for breakfast, lunch or snack. Can be served with green salad. Super delicious and very nutritious!



  • 1 can of chickpeas in water

  • 1 clove of garlic

  • Lemon juice

  • 1 medium Avocado

  • 3 Sun dried tomatoes

  • Spring onion (finely chopped)

  • 1 small Zucchini

  • Handful of Rocket salad (if you like)

  • 4 slices of Wholegrain (or Gluten Free) Bread


First heat up your grill and place zucchini slices tossed in a tiny bit of olive oil, grill for a few minutes until they marked with those lovely stripes of char.


While they are grilling prepare hummus, which is a great source of plant based protein. Drain chickpeas but leave a bit of water, throw it into a food processor with sun dried tomatoes, garlic, lemon juice, and a pinch of salt and pepper. Mix everything together until well blended and spreadable adding more spices to suit your taste. Instead of garlic you can use jalapeño or chillies.


Toast your bread slices, spread a good coating of hummus on top, sprinkle with the spring onions, and top it up with avocado and grilled zucchini slices. Throw a few rocket salad leaves on top for a nice peppery taste if you like.
